Enjoy this delicious and very easy to make recipe for Leek & Courgette Soup.
Ingredients:
- 2 leeks
- 2 courgettes
- 1 onion
- 2 spring onion stalks.
- 2 garlic cloves.
- Season with salt and pepper to taste.
- 1 teaspoon of fresh thyme.
- 1 teaspoon of curry powder (or turmeric).
- 1 tablespoon of coconut oil.
How to make your own Leek & Courgette Soup:
- Dice the onion, spring onion stalks, garlic cloves, leeks, and zucchini into small pieces.
- Sauté diced onion, spring onion stalks, and garlic cloves in coconut oil for about 5 minutes until the onion is translucent.
- Add leeks and sauté for an additional 3 minutes, then introduce courgettes. Stir-fry both for approximately 5 minutes over low heat.
- Season with a pinch of thyme, curry powder, and/or turmeric. Add salt and pepper to taste.
- Bring the mixture to a boil using about 1 liter of water.
- Incorporate the stock cube and let it simmer for around 10 minutes.
- Blend the mixture with a stick blender until it achieves a smooth, pureed consistency.
